Sussex Brie, Alsop and Walker 150g A creamy grassy tasting cheese, again with a natural edible white rind. Made from cow’s milk and much like the camembert will continue to mature in a fridge becoming softer and stronger for up to seven weeks.
Sister Sarah, High Weald Dairy, Sussex, 250g Sister Sarah is a semi-soft goats’ milk cheese. It is matured for just 8-12 weeks. The cheese is very white because the goats digest all the carotene in the grass. It is a mild cheese, with a light and delicious flavour and without any of the ‘goatiness’ which is often associated with a goat cheese. The cheese is coated in annatto (a south American berry) to create the orange colour.
Montgomery’s Cheddar, Somerset, 250g Montgomery’s mature cheddar is the epitome of traditional, handmade, Somerset Cheddar, matured for 12 months wrapped in muslin cloth on wooden shelves and has deep, rich nutty flavours. Made with unpasteurised cows milk and animal rennet.
Stichelton A juicy acidity and toasty, biscuity notes toward the rind are the hallmarks of Stichelton, though the range of flavours this soft, creamy raw milk blue can exhibit is extraordinary: from crisp green apple right through to beef stock umami.
Sparkenhoe Red Leicester, Leicestershire Cheese Co. 250g A traditional Red Leicester cheese made from the milk of their own cows, a true revival of a fabulous cheese, nutty, sweet with a citrus finish. Cloth bound and matured for 6 months on beech shelves. Made with unpasteurised cows milk and animal rennet.
